The Xbox will (or should) turn on without any video cable in place but, depending on what hardware modding you actually did,  you'll likely get the LED flashing error code: Yellow/Green. After a certain amount of time without a video cable connected the Xbox will shut down.

The Xbox connector supports Composite. S-Video, SCART(RGB) and Component. Xbox cables were/are not that much more expensive than any standard AV cable types. Putting in permanent (red/white) stereo audio RCA output sockets is a pretty good idea. That would actually be useful but when breakout RCA adapters cost peanuts that too is questionable.

The reason why it was done was because I installed an amplifier and headphone jack in the xbox, and I just installed the RCA connectors as a side note. And I thought it was cool not needing the xbox-specific cable.  I don't recall them ever being "cheap" but hey they was a decade ago lol.
