USB based headsets will NOT work unless they have been approved by MS (and I don't think any have or are in plans to be at this time)

Your only option would be to get a receiver that accepts Digital Optical and translates it into the necessary 5.1 headphone signal...

I've not looked into too much of the 5.1 headphone standards so I can't be of much help past that.

ummmmm, yeah.  I'm a little confused how you get 5.1 surround sound from headphones.  I thought the 5.1 stood for 5 speakers, and 1 sub.  Wouldn't the most you could get from headphones be stereo sound?
